In South America the cutting edge of new chef's come from Lima Peru or go there to learn new dishes. Lima is definitely the Ceviche Capital of the World and Peru in general is famous for their Pisco Sour drinks as well their rotisserie chicken. Pio Pio delivers on everything. They have several locations in Manhattan and Queens and you can't go wrong with any of them but my favorite is the Hells Kitchen Location because it has the best interior and NYC vibe out of all of them. Nice bar and it's a bi-level dining space. This place is always packed and the downstairs is real loud so if on a date eat upstairs and you most definitely will need reservations. Every dish is great but for appetizers my favorite Peruvian Dish is the Causa. Main courses the Ceviche is fantastic as well as the Chicken. For something a little different try the Aji de Gallina. And try the traditional Pisco Sour.
